Tilapia and Avocado Pico

Ingredients

  • 4 6-oz. tilapia fillets
  • 2 teaspoons cumin
  • 1 lime
  • 1 avocado, diced
  • 2 medium tomatoes, diced
  • 2 tablespoons fresh cilantro
  • Salt and pepper to taste

Directions

  1. Preheat oven to 450º F. Line a baking sheet with aluminum foil and spray with cooking spray.
  2. Lay fish out on baking sheet and spray the top with a little cooking spray. Sprinkle evenly with cumin, salt, and pepper. Lay 1 lime round on top of each fillet.
  3. Bake fish at 450º F for about 8 minutes until fish becomes flakey, adjusting based on your oven.
  4. While the fish is cooking, combine avocado, tomato, and cilantro. Season with salt and pepper and the juice of the remaining third of the lime.
  5. When fish is done, top with the avocado pico and serve.
