When you have fresh produce, you want to use it as much as possible. Not only is it better for the environment, it’s also better for you and your family. But, sometimes we get tired of the same old recipes, so you have to get creative. Here are some ideas on how to use your vegetables in creative ways.
MAKE STOCK WITH YOUR SCRAPS
If you have leftover produce, or even just the scraps from making other recipes, these are perfect for making vegetable stock. Add all of your leftovers to a large stock pot. Add in some aromatic herbs, as well as onions and garlic to give your stock a nice flavor. Cover with water and simmer for at least an hour, stirring occasionally.
If you don’t have enough scraps at one time to make stock, you can store them in the freezer in a large plastic bag. Then, once you’ve collected enough, you can get to cooking! This stock is perfect for virtually any recipe that uses stock.
ADD THEM TO DESSERTS
If you want a way to sneak vegetables into your desserts, here are some ideas. Not only will it make your recipes healthier, it will also allow you to use some of your extra vegetables! Try using your almost-turned, creamy avocado in a chocolate pudding. Blend beets and cashews together for a vegan cheesecake. There are tons of plant-based recipes that work great for satisfying your sweet tooth, while using up your extra produce.
START A COMPOST BIN
If you have a garden, or know someone who does, a compost bin is perfect for your trimmings, scraps, or veggies that have gone bad. Just throw them in a sealable, plastic container with other compostable things and let it sit. Not too long after, you’ll have the perfect fertilizer for your garden.
